Packing Lunches Can Be Tough!

This is our first year packing school lunches in the DIY household and it’s not always easy. By the time Mr DIY is home from work, we eat dinner, clean up, play with the kids, get kids bathed, deal with approximately 1.2 billion sibling disagreements and wrangle wild hooligan children into bed, I am just exhausted! Preparing lunches seems like just one more chore to dread in an already cram-packed evening when all I want is to collapse on the couch.

But just like all parents, we want our kiddo to eat healthy while not pitching their lunch directly into the trash bin. I know my boy would totally prefer to skip the veggies and eat packaged junk all day. And honestly? I don’t blame him.

Food manufacturers fill their prepackaged snacks with a lot of salt, sugar, and weird ingredients to make their product taste amazing. Add in some cute, brightly colored child-sized packaging and of course a kid would prefer that little pack of mini muffins to a piece of broccoli!

A Special Yet Healthy Treat

When my kid begged for the aforementioned packaged mini muffins, I could tell he was prepared to throw down to get his way. Every parent knows that look, right? Kinda terrifying, really.

Since I didn’t love the ingredient list and I didn’t love the expensive cost, I calmly told him “I know those look so yummy. How about this? Mama will make you mini muffins to take in your lunch. You can help me and even choose your flavor!”

Worked like a charm. We avoided an ultra embarrassing melt down in Target and I could take a little extra time to make him feel special with a relatively healthy “treat”.

We freeze all of our extras so they are ready to go straight into the lunch box. You don’t even need to heat them because they will be thawed by lunchtime.

Amazing Whole Wheat Banana Mini Muffins

Ingredients

  • 1 1/2 cup white whole wheat flour
  • 1/2 cup sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup coconut oil or melted butter
  • 2 tsp vanilla
  • 1 large egg
  • 3 medium ripe bananas

Instructions

  1. Preheat oven to 350 degrees

  2. Spray mini muffin pan with non-stick spray

  3. Whisk dry ingredients together in large bowl

  4. Combine wet ingredients and add to dry ingredients

  5. Add batter to pan. Fill 3/4 to all the way full for cute rounded muffin tops

  6. Bake for 12 - 15 minutes until tops are golden brown and a toothpick inserted into the center of a muffin comes out clean
