Or “FOOD CATASTROPHES CAN’T STOP ME”
Day 2 was another relatively easy day. We’ve all had well rounded, tasty meals with no major fits yet….from the children or the adults. I mean, I do get pretty hangry sometimes.
There were a few kinks thrown into our day’s meal plans though.
1: A partial carton of eggs jumped out of the fridge onto the hardwood floor. Ok, it just fell. But they all broke. Of course. And since I buy pastured eggs from my chicken-raising sister whenever I can, I didn’t want them going to waste! A fancy breakfast for Mr DIY and I was added to the menu. Got to be flexible, right?
2: Due to the egg-tastrophe, I needed to go to the store. Eggs are one of those staples I know I can’t manage without. The thing is, I’ve totally messed up the challenge already. I went grocery shopping (without a list) and I bought a loaf of bread on a whim! Haven’t I just been talking about not mindlessly purchasing food and about getting myself organized?! And I totally failed by going to the store and buying on impulse! When I got home, I thought “I should have just made bread! You’re supposed to Shop the Pantry, Kate” So I’m kind of kicking myself but also remembering “Progress Not Perfection.” If we run out of bread again, I will make it myself.
Day 2 Meal Plan
Breakfast: Fancy scrambled eggs with tomato, garlic, swiss chard and green onion (both from the garden).
Since we ran out of strawberry jam for the kid’s toast on Day 1, I decided to make some Healthy Zucchini Muffins from Gimme Some Oven. We make these Zucchini Muffins a lot….a LOT!….because they are just that delicious. Warm with some butter and a touch of honey? Heaven!
I secretly think Ali (the recipe genius behind Gimme Some Oven) might be my 5 year old’s favorite person in the world (even over me!). His two most requested, very favorite, must-have recipes (the zucchini muffins and Broccoli Cheese Soup) come from her site. I always follow her instructions to a T because the boy would probably notice a difference and then cause an actual riot. Just kidding. Sort of. :::shudders in fear::: That is the power Ali holds in her amazing creations. Check out her site for a ton of recipes that are great for all skill levels.
Lunch: Leftover White Bean Chicken Chili
Dinner: I had a pork roast lounging in the freezer that was just screaming for a day in the Crock Pot. I wasn’t really sure what I should do with it so I made a simple rub (recipe to come soon!) and let it cook on low for 8 hours. Total win! It was one of those recipes where you say “MMM! Did you try this yet?!” as you shove forkfuls into your mouth before your family can even get to the table. I’m totally looking forward to those leftovers! I paired that amazingness with frozen peas and the last of our leftover corn bread.
Another good day for our challenge. I’m so glad I tried something new for dinner because now we have a new family favorite! Hopefully we have a few more success just like that.
