7 Day Shop The Pantry Challenge: Day 3

Or “HOW DOES ONE KID LOVE MUFFINS AND THE OTHER KID HATE THEM?!”

This is a serious question. How? I’ve never met a person who disliked muffins! My younger son refuses to eat them no matter what kind I make. Even chocolatey ones! Whaaa?

This unending muffin boycott is an issue since I made Zucchini Muffins on Day 2 specifically for breakfasts during our challenge. Ugh! Maybe I should be a nice Mama and make him his favorite Cinnamon Raisin Bread since I made his brother’s beloved muffins. Yeah, I should do that.

Day 3 Meal Plan

Breakfast: Zucchini Muffins, cottage cheese and bananas. We basically eat the same carb/protein/fruit basics every day.

Lunch: We had the choice of leftovers from the last two days or turkey sandwiches with veggies and fruit.

Dinner: Tonight was the first night of the challenge where I found myself standing in front of the fridge thinking “Oh crud. It’s 5:00. What are we going to do for dinner?!” We had a busy day and I did not prepare at all. Even knowing I had to write about it for the blog was not enough to keep me organized. But that’s real life for all of us! We can’t be organized and prepared 100% of the time.

With no idea what to make, I took a visual inventory while rummaging through our freezer. I unearthed a pound of ground hamburger that was already browned and frozen (a great hack for busy nights!). An easy taco night would have been good but we didn’t have any shells or tortilla chips. Crap. But I did have potatoes. Maybe loaded baked potato night? Maybe Loaded Taco Potatoes?

Oh mama. Loaded Taco Potatoes are going on the menu more often! I just added all of our normal taco toppings (taco meat, cheese, beans, tomato lettuce, sour cream, salsa) to a baked potato and called it dinner. Tasty, cheap, and very filling! Our eldest said “These are different” with a skeptical look on his face but he promptly cleaned his plate. The slightly odd twist on an old favorite went over pretty well.

To avoid the “What’s For Dinner Dilemma” again so tomorrow, I will try to be more prepared. You know, like not forget that I have a family to feed!
