7 Day Shop The Pantry Challenge: Day 1

Day 1 of the 7 Day Pantry Challenge started off just fine. I was confident. I was on top of this. I didn’t have to think very hard plus I had enough of our normal essentials that the kids haven’t noticed anything is amiss. Oh my sweet, innocent children. You might be eating crazy, hodge-podge meals soon….so enjoy your bliss.

Day 1 Meal Plan

Breakfast: Scrambled egg with Swiss Chard from the garden for Mama. Toast with plain cream cheese and Homemade Strawberry Jam plus blueberries for the boys. My kids are 100% certain this is the best way to eat toast and had no problems with this offering. Well, they did beg for waffles (which I didn’t have). Other than that tiny bit of whining, they were happy, but….the jam and blueberries are officially gone. Tomorrow’s breakfast will need some creativity.

Lunch: Quesadillas made with leftover Cilantro Lime Chicken, black beans, and cheese with sour cream for dipping. They were not so thrilled with having “extras” in their quesadillas since they usually just get plain cheese. Since I am focusing on using up leftovers and being creative, they just had to deal. I thought our lunch was amazingly delicious!

Dinner: After a month of unseasonably hot weather, we finally had a cold snap that was so darn refreshing! I decided on making a soup to celebrate this we-can-be-outside-without-sweating-our-tushies-off kind of day. I knew I had Great Northern Beans, chicken broth, and a spare chicken breast on hand, so I whipped up an easy White Bean Chicken Chili (oh so good!), corn bread from scratch and pineapple for “dessert”.

 

Overall, our first day of the Challenge was a cinch because I had plenty of basic pantry items and left-overs to use. I don’t expect the rest of the week to go so smoothly but I’m still confident!
