7 Day Shop the Pantry Challenge: Days 6 & 7

Or “Combining days because our meals were repeats and that’s just plain boring.”

I am sharing my daily struggles/successes/messes of a 7 Day Shop the Pantry Challenge where I attempt to create all meals from food we already have in our home. You can read the original post about this challenge here.

I combined Day 6 and 7 because the fam ate almost the same thing on both days and my brain was in full “Mom-Brain” mode. I was basically non-functioning as far as remembering schedules, activities, etc and I kind of embarrassed myself. I’ll share more on that in a minute.

Day 6 & 7 Meal Plans

Breakfast: Cinnamon Toast, cottage cheese, scrambled eggs, fruit

Lunch: Hot dogs, cheese quesadillas, carrot sticks, fruit

Dinner:  This is where things got a little embarrassing. If you know me at all, you know I hate being late. But unfortunately for me, I am late a lot! Can I blame the children? Yeah. I’m raising them so I get to blame stuff on them.

French Bread Pizza

We had a great kiddo/mama day on Day 6. We met friends for a morning movie, the kids had their lunch, and were so good during quiet time. I rounded out our amazing day with French Bread Pizza for dinner with a handful of pepperonis, leftover marinara, and part of a French Bread loaf from the freezer. Easy peasy!

Dinner was ready, kids were munching happily and then Mr DIY comes into the kitchen and says “Uh. Didn’t you have dinner plans with the family tonight?”

Ohhhhh crap.

I totally flaked on a prescheduled family dinner! And they couldn’t even get a hold of me because my phone was on silent from the movie! I was so very late and I was so very mad at myself. Again, I hate being late.

So our French Bread Pizza was saved for the next night and Day 6 & 7 became one post.

Overall, I feel like I did pretty great this week. With just one purchasing-food-on-a-whim snafu, we were able to make all meals from things we already had at home. I even made some breads from scratch (corn bread, muffins, and Cinnamon Raisin Bread) to appease the hungry minions….I mean children….and I really think I could have gone longer without shopping for dinner menu items. Next time I will challenge myself to 2 weeks!
