Nothing screams summertime like corn on the cob. Well, maybe homegrown tomatoes….maybe it’s a tie. Shhh! Don’t tell the corn!

In the past, I’ve only made these golden gems for special occasions. I hate the boiling, the heat, the watching, the waiting, and the inevitably overcooked corn that mushes as you bite into it.

Can you tell I’ve got experience with this particular failure? Talk about a let down.

This extremely-serious-overcooked-corn-on-the-cob dilemma of mine is solved by the Crock Pot Express or Instant Pot!

Seriously, guys. You throw as many cobs as you can eat into the pot, set it, and walk away with a perfect side dish that’s ready in a flash.

So easy!

I’ll never go back to the boil on the stove method and we’ll definitely be eating fresh corn on the cob more often this summer.

Pressure Cooker Corn On The Cob

Ingredients

  • corn on the cob
  • 1 cup water

Instructions

  1. Place trivet into Crock Pot Express or Instant Pot

  2. Place as many shucked corn cobs as needed on trivet and add 1 cup water.

  3. Set Pressure Cooker to Steam option for 5 minutes and turn valve to Seal.

  4. When time is up, do a Quick Release (use a long spatula or spoon to flip the valve so you don't burn yourself!) and enjoy!
