My absolute favorite zucchini recipe. I don’t say things like “this is the best thing ever” very often, but this really is the best Fried Zucchini recipe ever!

The Best Fried Zucchini Recipe Ever!
Our Kitchen Garden is growing well but isn’t really producing much at the moment. We’re just waiting for all those delicious cucumbers and tomatoes to ripen. The one exception is the zucchini plant! It has been pumping out fruit like crazy.
With so much zucchini on hand, I’ve sauteed it as a side dish, made Zucchini Muffins, and hidden it in other dishes. All really good, of course, but this Fried Zucchini has stolen my heart!
I’ve tried making Oven Baked Zucchini before in an attempt to be “healthier” but it’s just not the same! Getting a bite of that tender zucchini with the crispy breading is divine. I just can’t replicate it in the oven. For me, the perfect fried zucchini comes from frying in my beloved cast iron skillet and it’s just a couple minutes on each side until zucchini nirvana.
These round little bits of heaven came about as I was scrambling for a dinner side dish during Day 4 of our 7 Day Shop the Pantry Challenge.
We dunked them in marinara sauce and it was a hit for the whole family. The full plate was almost gone by the time dinner started and even the kids begged for more. Fried or not, they were eating zucchini and that makes a mama happy.
This recipe was really just a spur of the moment, throw it together, hope for the best kind of thing. I love when you just whip something up and it comes out being a new family favorite!

The Best Fried Zucchini Recipe Ever!
Ingredients
- 1 medium zucchini
- 1/4 cup all purpose flour
- 1 large egg
- 1/2 cup unseasoned breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions

Heat 1/4" canola oil in pan on medium heat.

Slice zucchini in 1/4" slices and set aside.

Place flour, beaten egg, and breading mixture in 3 separate bowls.

For the breading: combine breadcrumbs, parmesan, salt, pepper, garlic powder, onion powder.

To bread zucchini slices, dredge each slice in flour (shake off excess), then dunk in beaten egg, then into breadcrumbs. Press firmly to make sure breadcrumbs stick to the slice.

Once oil is heated, cook each zucchini slice for approximately 1 minute on each side or until golden brown.

Remove from oil and drain on paper towel before serving with your favorite dipping sauce.
