MY FAVORITE QUICK AND SIMPLE HAMBURGER STEW RECIPE
I am all about easy dinner recipes. When you’re strapped for time after work or your kids are screaming at you while pulling at your skirts (and by skirts I mean yoga pants. Because what modern parent puts on real pants if they don’t have to, amiright?), you need something fast and simple.
Hamburger Stew nails it.
This old family recipe has always been my favorite. So much a favorite that I still ask my parents to make it when we come to dinner. Why does food always taste better when someone else makes it? When my second son was born and I was struggling to recover, my sweet Dad made us enough Hamburger Stew to feed an army…not having to cook AND getting my favorite meal? He officially qualified as an angel, in my opinion.
It is a great go-to meal because the ingredient list is very basic and it is surprisingly quick to make. You just brown the hamburger, throw all the ingredients in a pot, let it simmer for about 20 minutes, then done. Easy peasy.
I don’t normally use the cans of Cream of Mushroom. I actually use a DIY “Cream of Anything Soup Mix” recipe that I’ll be posting soon! And if you happen to be out of Chicken Stock? Just use water instead! It is still delicious. Just another reason why I love this recipe.
I like to serve with bread and a sidesalad. Total crowd-pleaser!
What is your favorite go-to recipe for those crazy evenings?
